The team at Timberyard in Edinburgh, a Michelin Star restaurant, is opening a new restaurant called ‘Montrose’. Montrose, located in the Abbeyhill area, is housed in a building from the late 1800s and offers a wine bar on the ground floor and an intimate dining room on the first floor.
The menus at Montrose feature seasonal and locally-sourced produce, including wild game, rare breed cattle, foraged ingredients, and organic fruits and vegetables. The dining room offers a simple four-course set menu, while the wine bar provides European-inspired small plates and a three-course lunch menu.
Head chef Moray Lamb described the ethos at Montrose as simple: source great produce, cook it well, and season it perfectly. The wine list also reflects Timberyard’s focus on small producers and sustainability, offering a completely capsule-free and 100% organic wine list.
Jo Radford from the front of the house expressed excitement for the new venture, stating that it’s an exciting year for the team. The team is committed to evolving the dining legacy at Montrose with the support of talented chefs and the wider team.
